A cake in the shape of a loaf, made with one pound each of flour, butter, sugar, and eggs, plus a flavoring (e.g. vanilla, lemon). It has a fine texture.
The Spanish term for pumpkin seeds, with or without their hull, as well as roasted. The hull is white in color, and the seeds inside are dark green in color.
When sugar syrup is cooked, water evaporates and sugar concentration increases as well as the temperature of the syrup. The hard-crack stage is when a bit of syrup dropped into cold water solidifies into brittle threads that break when bent. The temperature of the boiling sugar syrup at this stage is between 300°-310°F.
The personal in charge of the garde manger.
